A Month of Booze & Sweets: First up, Mojito Jello Shots!

There are so many enjoyable National Days to observe this July and we don’t wish to miss a single one! The days we are especially excited about? Booze and sweets of course! And to kick it all off, we are preparing for #NationalMojitoDay (coming up on July 11th) with this yummy Mojito Jello Shot recipe. Now who’s ready for some Mojito Jello Shots?

Here’s what you will need:

  • 8 tbsp sugar
  • 4 packets Knox gelatin
  • 2 1/2 cup cold water
  • 1 cup raspberry juice
  • 1/2 cup cold white rum
  • 1/2 lime
  • Mint for garnish

First layer:

First things first, it is time to make the raspberry juice.  Gently wash 6 oz of berries, and place them in a thick pot with 1 1/4 cup water. Bring to a slow boil, mash with a potato masher or spoon, then bring back to a boil, and then remove from the heat. Cool slightly. Pour the mashed berries through a colander to strain.  Measure out 1 cup juice and pour in an unheated saucepan. Sprinkle on two packets of Knox gelatin. Allow it to sit for a couple of minutes then whisk until it’s combined. Turn on the stove-top to medium heat. Add 4 tbsp of sugar and whisk until combined.  When simmering, add one cup cold water. Pour your raspberry mixture to a 9×13 pan that was (very) lightly greased. Refrigerate until firm (about 4 hours).  Wait to create the next coating until the initial layer is set. 

Second layer:

Pour 1 cup water in an skillet. Sprinkle on two bundles of Knox gelatin. Let it sit for a couple of minutes then whisk it till combined. Turn on the stove-top to moderate heat. Add 4 tablespoons of sugar and whisk until combined.  In a different bowl, combine 1/2 cup cold white rum, 1/2 cup cold water, and juice out of 1/2 lime. (To get a longer alcohol concentrated jello, use 1 cup cold white rum.)  When gelatin mixture is simmering, add rum mixture, then pour in to your 9×13 pan. Refrigerate until firm (about 4 hours).  Slice into cubes, top with mint for garnish, and stick pretty glassware such as with our personalized Drunk in Love plastic cups to function and enjoy!
